iTunes 7.7 shows up your iPhone's name with the remote icon in the sidebar when the 4 digit password shows up in your phone.
Select it, type the pass in iTunes and you're done.

Is your phone connected to the same Wifi Network ?
Try to ping it from your computer.

Try to reinstall iTunes.
Looks like your Bonjour service (especially on Windows) is not activated or not working.
(Remote makes use of it to find shared libraries from computers in the same network)

To make sure Bonjour is working, check it by running iChat and in the Window menu select Bonjour List.
If Bonjour is not activated it will ask you if you want to start it.
Tell me if it does start.

The Library Sharing feature in iTunes is independent of the Remote Sharing feature, you know it because it asks you for a 4 digit password.

I just fixed the problem I was having with the remote in Windows Vista installed in an Apple Computer. It can help some of the Mac users (I don't know how but lets try).
I was having the same problem of you guys and I read in Apple's Forum that when I finished to install Windows Vista using BootCamp I should install Java before Bounjour. I did not do it, and so it wasn't working my remote (I could see it in iTunes and even connect it with the password, but I was losing the connection a few minutes after).
I went to My Programs, uninstalled Bonjour and installed it again, downloading it from Apple website. When you install Bounjour it sets the Firewall and Windows all over again and it just worked fine after.

Same problem here when pairing with an AppleTV. Apparently the authentication fails if the AppleTV is connected to a WLAN base station (which the iPhone also uses) using an ethernet cable. When both ATV and iPhone are on WLAN, password authentication works. Later I plugged back the ethernet cable to the ATV, and Remote continued to work.

I had the same problem yesterday, could not get remote yo show up in devices...
look that in your itunes in preferences, it is checked that Allow to search for Iphone and Ipod Touch Remotes, something like that...
Still, could not get it to show on the itunes... i had it, plugged in with the cable, what i did was that i remove the cable, closed itunes... open it again, and there it was, i now can control my library, weird... but it worked... try it like that.
Hope i can help!
