I haven't been able to find one. I tried to create one, but it was too difficult for my limited talents. Would love to have one.:)

Same here. Been using NKJV and it's driving me nuts :)

a pdf or html ebook for the Books app would do fine, free would be nice too.

I downloaded the NIV in HTML format using Ben's E-Sword Tool, available in the files section of a Yahoo group:
http://groups.yahoo.com/group/e-Sword_Tools/files/BeST%20and%20BPeST

Then I put it into Books.app. I can't offer copies because the NIV is copyrighted, but I think if you own a paper copy then it's probably fair use to download an electronic version yourself.
